MERRY CHRISTMAS!
Gluten free zucchini & cauliflower raw vegan stuffing

1 Pulse in food processor... quite fine:
Cauliflower
Zucchini
Celery
Bok Choy
Fresh green onion
Poultry seasoning
A little sea salt (optional)
2 Blend in blender... to sour cream-ish consistency:
Zucchini
Sunflower seeds
Sesame seeds
Fresh green onion
Fresh lemon juice
Poultry seasoning
A little sea salt (optional)
3 Pulse in food processor... to rice size or a bit bigger: additional cauliflower
Fold 1, 2, and 3 into each other and spread out thick on dehydrator sheet and reduce for several hours until dry with a hint of moisture left. I scraped it up into a crumble about half way through the reducing.
Once reduced... put crumble into a big bowl and add in fine chopped... celery, bok choy, radish, cilantro, olives (optional). Fine chopped sundried tomatoes are also nice.
Also add in hemp seeds and sesame seeds.
Mix up into a delightful stuffing.
